offers two types of duck and goose livers, Grade A and
Grade
B.
All our duck and goose livers are vacuum packed to ensure freshness and
are stored the optimum temperature of 33°F.
Grade A goose and duck
livers
Size: 580-1440 grams
for goose liver, duck liver is slightly smaller.
Our
Grade A
goose and duck livers
are oval shaped lobes, which produce therichestmost flavorsome
mouthfeel and lingering delicious aftertaste. When cut and sautéed the
Grade
A lobes
produce attractive, uniform medallions that lose almost no fat,
moisture or flavor in high-heat preparations.
The texture of our
Grade
A goose
and duck livers are very firm to the touch with the flesh and outside skin
creamy white, and free from bruises or discoloring.Internally there are
very few and smallish veins, with a very homogenousconsistency.

Grade B goose and duck
livers
Size: 380-720 grams for
goose liver, duck liver is slightly smaller.
Our
Grade
B goose
and duck livers may have slightly more discoloring or blemishes and can be
smaller than our
Grade A product. The
Grade B goose and duck livers are nevertheless high-quality good value
products, which are less expensive and very suitable for both pan frying,
mousses and terrines.
